Easy and delicious sugar cookie bars infused with almond and vanilla extracts, topped with a sweet creamy frosting.
Ingredients:
  • 2 cups white sugar
  • 1 cup butter, at room temperature
  • 4 eggs
  • 2 teaspoons almond extract
  • 1 teaspoon vanilla extract
  • 5 cups all-purpose flour
  • 0.75 teaspoon salt
  • 0.5 cup butter, at room temperature
  • 1 teaspoon almond extract
  • 0.25 teaspoon salt
  • 4 cups confectioners' sugar
  • 5 tablespoons heavy whipping cream, or as needed
Instructions:
  • Preheat the oven to 375°F (190°C) and generously grease a 13x18-inch baking sheet.
  • In a bowl, cream together white sugar and 1 cup of butter until fluffy. Beat in the eggs one at a time, making sure to mix well after each addition. Stir in 2 teaspoons of almond extract and vanilla extract until fully incorporated.
  • In a bowl, whisk together flour, 3/4 teaspoon salt, and baking soda. Add this mixture to the egg mixture and stir until just combined. Spread the batter onto the prepared baking sheet.
  • Bake in the preheated oven for 10 to 15 minutes until a toothpick inserted in the cookie comes out clean - they may not appear fully done. Allow to cool thoroughly for about 30 minutes.
  • In a bowl, beat 1/2 cup of butter with an electric mixer until smooth and creamy. Mix in 1 teaspoon of almond extract and 1/4 teaspoon of salt. Gradually add confectioners' sugar, 1 cup at a time, blending until fully combined. Slowly mix in heavy cream, 1 tablespoon at a time, until the frosting is smooth and spreadable. Frost the cooled cookie bars generously.
