Indulge in irresistible steak nachos with tender strips of beef, creamy avocado, beans, and gooey cheese on crispy tortilla chips.
Ingredients:
  • 1 (1 1/2-pound) skirt steak or flap steak
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 0.5 teaspoon ground dried chipotle pepper
  • 2 tablespoons bacon fat
  • 1 yellow onion, diced
  • 1 teaspoon salt, divided
  • 0.5 teaspoon dried oregano
  • 2 (15 ounce) cans pinto beans, rinsed and drained
  • 1.5 cups water or chicken broth, plus more as needed
  • 1 (14 ounce) bag corn tortilla chips
  • 12 ounces shredded Cheddar cheese
  • 12 ounces shredded Monterey Jack cheese
  • 2 ripe tomato, chopped, or more to taste
  • 1 avocado - peeled, pitted and diced
  • 0.5 cup chopped white onion, or to taste
  • 1 jalapeno pepper, seeded and minced
  • 0.5 cup sour cream, for topping
  • 0.5 cup chopped fresh cilantro
Instructions:
  • Season both sides of the steak generously with a mixture of salt and pepper. Sear the seasoned steak in a hot skillet with oil until it reaches medium doneness, around 6 minutes per side. Use an instant-read thermometer to ensure the center reaches 135 to 140 degrees F (60 degrees C). Rest the cooked steak in a bowl before serving.
  • Add a splash of water to the skillet and stir to loosen the browned bits and deglaze the pan. Pour the flavorful liquid over the meat and let it cool completely.
  • Once the meat has fully cooled, slice it into thick pieces, about 1/2 inch wide, following the grain. Then, slice those pieces into thinner strips. Finally, dice the meat by cutting it into pieces against the grain. Return the chopped steak to the bowl and mix it with the pan drippings.
  • In a pot over medium heat, melt the bacon fat. Add the onion with a pinch of salt and cook until softened, for 5 to 6 minutes. Stir in oregano, then add the pinto beans and water. Simmer until the onions are soft, about 5 more minutes. Reduce heat to low.
  • Use a potato masher to crush the beans to your liking. Adjust the thickness with more liquid if needed. Season with the remaining salt to your preference. Take off the heat.
  • Heat your oven to a toasty 450 degrees F (230 degrees C).
  • Create delicious nachos by layering tortilla chips in a heat-proof pan until they are 2 or 3 deep. Add spoonfuls of beans and a generous handful of steak pieces on top of the chips. Finish by sprinkling with grated cheese.
  • Bake in the hot oven until cheese is gooey and edges are golden brown, around 10 minutes.
  • Top the nachos with a colorful mixture of tomato, avocado, onion, and jalapeño. Drizzle with creamy sour cream and finish with a sprinkle of fresh cilantro.
