Boost flavor with hard boiled egg yolks in Swedish spritz cookies.
Ingredients:
  • 8 eggs
  • 2 cups salted butter, softened
  • 1 cup white sugar
  • 1.25 teaspoons almond extract
  • 4 cups all-purpose flour
Instructions:
  • In a saucepan, add enough water to cover the eggs by 1 inch. Boil the water and eggs. Let the eggs sit in hot water for 15 minutes. Drain the water, cool the eggs under cold running water, and peel them. Separate yolks from whites. Sieve or grate yolks finely. Save whites for later.
  • Preheat your oven to a toasty 400 degrees F (200 degrees C) and prepare a baking sheet by lining it with parchment paper.
  • In a large bowl, cream together butter and sugar using an electric mixer until smooth. Add egg yolks and almond extract, and mix well. Gradually incorporate the flour until just combined. Use a spritz style cookie maker to press cookie dough onto a prepared baking sheet.
  • Bake in the preheated oven until edges are lightly golden, about 8 to 10 minutes.
