Swedish Butter Crisps

Sticky, sweet cookie with pecans and brown sugar.
Ingredients:
  • 1 cup butter
  • 1 egg yolk
  • 2 cups all-purpose flour
  • 1 egg white, stiffly beaten
  • 0.25 cup brown sugar
  • 0.25 cup chopped pecans
Instructions:
  • Preheat the oven to 350°F (175°C) and generously grease a cookie sheet with cooking spray.
  • Using an electric mixer, blend butter and white sugar until smooth in a bowl. Mix in egg yolk and vanilla extract, then add flour until just combined. Press dough onto a cookie sheet and top with beaten egg white. Sprinkle with brown sugar and pecans.
  • Bake in the preheated oven for 30 minutes until beautifully golden and firm. Allow it to cool completely before cutting into perfect squares.
