Elevate summer BBQs with smoky, salty-sweet grilled watermelon - easy and delicious.
Ingredients:
  • 2 teaspoons granulated sugar
  • 1 1/2 teaspoons kosher salt
  • 1/2 teaspoon smoked paprika
  • 1/8 to 1/4 teaspoon cayenne pepper (see recipe note)
  • 1 mini watermelon or 1/2 standard-sized watermelon (about 5 pounds)
  • 1 lime, halved
Instructions:
  • To kick things off, fire up the grill on high and let it heat up for 10 to 15 minutes. While waiting, whip up a tantalizing spice blend by mixing sugar, salt, smoked paprika, and cayenne pepper in a small bowl. If necessary, give the grates a quick clean.
  • Start by rinsing and drying the watermelon before placing it on a cutting board. Trim off both ends with a large knife. Stand the watermelon upright on one of the flat ends you just made and cut it in half lengthwise. Lay the watermelon halves flat on the cutting board and slice into 1-inch thick pieces. Stack the slices and cut them in half to create triangular wedges.
  • Prep the grill by brushing the grates with oil using a paper towel. Ensure the grill is clean and super hot to prevent sticking. Grill the watermelon slices on high heat until grill marks form, about 2 to 3 minutes per side. Aim for vibrant green rind, not shriveled.
