Succulent beef meatballs cooked with carrots, onions, and pineapple in a tantalizing sweet and sour pineapple sauce, served over fluffy white rice.
Ingredients:
  • 1 pound ground beef
  • 1 egg
  • 1 tablespoon cornstarch
  • 4 tablespoons diced onion
  • 1 pinch ground black pepper
  • 1 tablespoon vegetable oil
  • 1 cup pineapple juice
  • 3 tablespoons cornstarch
  • 1 tablespoon soy sauce
  • 3 tablespoons distilled white vinegar
  • 6 tablespoons water
  • 0.5 cup granulated sugar
  • 4 slices fresh pineapple, cut into pieces
  • 1 large green bell pepper, cut into thin strips
  • 0.25 carrot, thinly sliced
  • 0.33333334326744 onion, cut into wedges and separated
Instructions:
  • Combine the ground beef, egg, cornstarch, salt, diced onion, and pepper in a mixing bowl. Shape the mixture into 20 meatballs, each about 1 inch in size.
  • Brown the meatballs in a large skillet over medium heat, then drain the fat and set aside.
  • In a large saucepan over low heat, warm the oil gently. Add the pineapple juice and let it simmer briefly.
  • Combine cornstarch, soy sauce, vinegar, and water in a small bowl until smooth. Pour into pineapple juice, add sugar, and simmer until thickened, stirring constantly.
  • Combine the meatballs, pineapple, green pepper, carrot, and onion in the flavorful sauce. Simmer until heated through.
