Tender baby carrots coated in a sweet and tangy glaze of brown sugar, apricot preserves, and Dijon mustard.
Ingredients:
  • 2 (16 ounce) packages baby carrots
  • 1 cup orange juice
  • 0.25 cup honey
  • 0.5 cup apricot preserves
  • 3 tablespoons Dijon mustard
  • 2 tablespoons butter
  • 2 tablespoons brown sugar
  • 0.125 teaspoon ground white pepper
Instructions:
  • In a large saucepan, combine carrots with orange juice and bring to a boil. Cover the pan, lower the heat to simmer, and cook until carrots are tender-crisp, about 8 to 10 minutes. Drain the carrots, saving 1/4 cup of the orange juice.
  • Add the carrots and their juice back to the pan over medium heat. Mix in honey, apricot preserves, Dijon mustard, butter, brown sugar, salt, and black pepper. Cook and stir until the sugar completely dissolves and the carrots are glazed and tender, for about 10 minutes.
