30-minute sweet chili pork stir-fry.
Ingredients:
  • 125g pack rice vermicelli noodles
  • 67.50 gm hoisin sauce
  • 68.75 gm sweet chilli sauce
  • 40.00 ml rice wine vinegar
  • 8.00 gm brown sugar
  • 36.40 gm peanut oil
  • 350g pork fillet, thinly sliced
  • 1 red onion, halved, cut into thin wedges
  • 200g green beans, cut into 5cm lengths
  • 125g pack baby corn, halved lengthways
  • 20.00 ml finely grated fresh ginger
  • 2 garlic cloves, crushed
  • 125.00 ml fresh Thai basil leaves
  • 8 iceberg lettuce leaves
Instructions:
  • Prepare the noodles according to the package instructions until al dente. Then, drain the noodles.
  • In a jug, mix together the hoisin sauce, sweet chili sauce, vinegar, and sugar.
  • Heat half of the oil in a sizzling wok or large frying pan until smoking hot. Quickly stir-fry the pork until golden, about 3-4 minutes. Transfer to a plate.
  • In the wok over medium-high heat, sauté the onion, beans, and corn in the remaining oil until the beans are vibrant green and tender-crisp, about 2-3 minutes.
  • Add the ginger and garlic and stir-fry until fragrant, about 1 minute.
  • Combine the pork with the flavorful hoisin sauce mixture, tossing until everything is thoroughly mixed and heated.
  • Gently fold in the fresh basil leaves until they just begin to wilt. Portion out the savory pork and noodles into individual serving bowls and accompany with crisp lettuce on the side.
