Sweet Persimmon Fireside Cookies

Delicious and fragrant persimmon bars packed with sweet spices.
Ingredients:
  • 0.5 cup cake flour
  • 1 teaspoon ground ginger
  • 0.5 teaspoon baking soda
  • 0.5 cup unsalted butter
  • 1 tablespoon lemon zest
  • 2 ripe persimmons, pureed
Instructions:
  • Preheat your oven to a toasty 375 degrees F (190 degrees C) and generously grease a 9x13 inch baking pan.
  • Combine the all-purpose flour, cake flour, cinnamon, ginger, baking soda, and salt by sifting them together.
  • Cream together the butter, sugar, and lemon rind in a medium bowl until fluffy. Add the egg and persimmon pulp, mixing until thoroughly combined.
  • Blend in the flour mixture gradually until fully incorporated.
  • Spread the prepared batter evenly in the pan.
  • Place in the preheated oven and bake until a golden brown hue appears, about 25 minutes. Take out the bars and allow them to cool. Once fully cooled, dust the top with confectioners' sugar and slice into bars.
