Indulge in individual Southern-style sweet potato desserts for a delightful treat.
Ingredients:
  • 1 can (23 oz) sweet potatoes in syrup, drained
  • 1/4 cup packed brown sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cloves
  • 1 can (14 oz) sweetened condensed milk (not evaporated)
  • 3 tablespoons chopped pecans
  • Sweetened whipped cream, if desired
Instructions:
  • Preheat the oven to 325°F and generously grease 6 (6-oz) ovenproof custard cups or ramekins with butter or cooking spray.
  • Blend all ingredients, excluding pecans and whipped cream, in a blender or food processor until smooth. Transfer the mixture into custard cups.
  • Place the filled custard cups in a 13x9-inch pan. Carefully transfer the pan to the oven and fill it with enough very hot water (being cautious not to splash any into the cups) until the water reaches within 1/2 inch of the tops of the cups.
  • Bake for 30 minutes. Sprinkle pecans on top of puddings. Continue baking for an additional 20-25 minutes until tops are set. Using tongs or a pot holder, carefully transfer the cups to a cooling rack. Allow to cool for 30 minutes. Top with whipped cream just before serving.
