Sweet potato casserole: mashed sweet potatoes with butter, sugar, eggs, and orange juice, baked to perfection. Perfect for Thanksgiving!
Ingredients:
  • 6 large sweet potatoes, peeled and quartered
  • 0.5 cup butter, melted
  • 0.66666668653488 cup dark brown sugar
  • 0.66666668653488 cup white sugar
  • 4 eggs, beaten
  • 0.66666668653488 cup orange juice
  • 2 teaspoons vanilla extract
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously butter a 2 1/2 quart baking dish.
  • Bring a pot of water to a vigorous boil. Add potatoes and simmer until tender, approximately 20 minutes. Drain and mash until smooth.
  • Combine mashed sweet potatoes, butter, brown sugar, white sugar, eggs, orange juice, and vanilla in a large bowl. Mix until smooth and then pour into a buttered dish.
  • Bake in a preheated oven for 40 minutes.
