Tangy fruit salad with marshmallows, peanuts, apples, and pineapple in sweet dressing, mixed with whipped topping. Serves 8.
Ingredients:
  • 1 (20 ounce) can pineapple chunks, juice reserved
  • 2 cups miniature marshmallows
  • 2 tablespoons all-purpose flour
  • 1 tablespoon white wine vinegar
  • 5 apple - peeled, cored, and chopped
  • 1 cup peanuts
  • 1 (8 ounce) container frozen non-dairy whipped topping
Instructions:
  • Combine the drained pineapple chunks and marshmallows in a large bowl. Chill the mixture in the refrigerator for 24 hours.
  • Whisk pineapple juice, flour, vinegar, and sugar in a saucepan. Bring to a boil and thicken. Chill in the refrigerator for 24 hours.
  • Combine the marshmallow mixture, pineapple juice mixture, apples, and peanuts. Gently fold in the whipped topping before serving.
