Sweet and tangy taffy apple salad with pineapple, marshmallows, whipped topping, and Spanish peanuts - perfect for picnics or potlucks!
Ingredients:
  • 2.5 cups miniature marshmallows
  • 1 (15 ounce) can pineapple chunks - drained with juice reserved
  • 0.5 cup white sugar
  • 1 egg, beaten
  • 1.5 tablespoons distilled white vinegar
  • 1 tablespoon all-purpose flour
  • 1.5 cups roasted Spanish peanuts
  • 1 (8 ounce) container frozen whipped topping, thawed
  • 2 tart apples - peeled, cored and chopped
Instructions:
  • In a medium bowl, gently mix together marshmallows and pineapple chunks. Cover and chill in the refrigerator for at least 8 hours or overnight.
  • Combine the reserved pineapple juice, sugar, beaten egg, vinegar, and flour in a small saucepan over medium-low heat. Cook and stir until the sauce thickens. Transfer it to a separate bowl, cover, and refrigerate for 8 hours to overnight.
  • In a large serving bowl, mix together the chilled marshmallow mixture and sauce. Gently fold in the peanuts, whipped topping, and apples until fully combined. Cover the salad and chill in the refrigerator until ready to serve.
