Tangy fruit salad with marshmallows, peanuts, apples, and pineapple mixed in a sweet pineapple-vinegar dressing, topped with fluffy whipped cream. Serves 8.
Ingredients:
  • 1 (15 ounce) can crushed pineapple, drained
  • 4 cups miniature marshmallows
  • 0.5 cup white sugar
  • 1 tablespoon all-purpose flour
  • 1 egg, beaten
  • 1.5 tablespoons white wine vinegar
  • 3 cups diced apple without peel
  • 1 cup chopped Spanish peanuts
  • 1 (8 ounce) container frozen whipped topping, thawed
Instructions:
  • Combine the pineapple with the marshmallows; set aside.
  • In a saucepan, mix the pineapple syrup, sugar, flour, egg, and vinegar. Cook over medium heat until slightly thickened. Allow to cool.
  • Gently fold in the whipped topping, pineapple mixture, apples, and 3/4 cup of peanuts until combined. Chill in the refrigerator until cold. Before serving, sprinkle the top with an additional 1/4 cup of peanuts for added crunch.
