Ingredients:
  • 0.33333334326744 cup olive oil
  • 3 tablespoons red wine vinegar
  • 2 cloves garlic, minced
  • 1 tablespoon chopped fresh thyme
  • 1 tablespoon chopped fresh parsley
  • 0.25 teaspoon crushed red pepper flakes, or more to taste
  • 4 (4 ounce) boneless pork chops, 1/2-inch thick
  • 0.25 cup chicken broth
  • 1 tablespoon olive oil
  • 0.5 yellow onion, thinly sliced
  • 1 cup chicken broth
  • 0.33333334326744 cup milk
  • 0.25 cup white wine
  • 4 cremini mushrooms, chopped
  • 4 white mushrooms, chopped
  • 2 tablespoons all-purpose flour
Instructions:
  • Combine 1/3 cup olive oil, vinegar, garlic, thyme, parsley, and pepper flakes in a bowl to create a flavorful marinade. Place pork chops in a glass or ceramic baking dish and pour the marinade over them. Refrigerate for 1 hour, flipping the chops halfway through marinating.
  • Preheat the oven to a toasty 350 degrees F (175 degrees C), then gently pour in 1/4 cup of savory chicken broth into a shallow roasting pan.
  • Remove the pork chops from the flavorful marinade, allowing any extra to drip off. Dispose of the remaining marinade.
  • In a large skillet over medium-high heat, sizzle 1 tablespoon of olive oil. Caramelize pork chops for 3 minutes on each side. Place in the roasting pan and layer with onion slices before sealing the pan tight.
  • Place in the oven and bake for 30 minutes until golden brown.
  • While the pork chops are baking, prepare the sauce. In a saucepan over medium heat, combine 1 cup of chicken broth, milk, white wine, and cremini and white mushrooms. Cook for 4 to 5 minutes. Add flour and bring to a boil, stirring often until thickened. Lower the heat and simmer the sauce until the pork chops are ready.
  • Take out the pork chops from the oven and discard the chicken broth. Pour the mushroom sauce over the pork chops, cover, and bake for an additional 30 minutes, or until no longer pink in the center with an internal temperature of 145°F (63°C).
