Teriyaki beef stir-fry

Whip up a quick and delicious teriyaki beef stir-fry with fresh Asian veggies in just 20 minutes!
Ingredients:
  • 36.80 gm vegetable oil
  • 500g Beef Rump Steak, thinly sliced
  • 80ml teriyaki marinade
  • 42.00 gm soy sauce
  • 20.00 gm mirin seasoning
  • 1 tsp freshly grated ginger
  • 1 brown onion, cut into wedges
  • 1 red capsicum, seeded, thinly sliced
  • 125g pkt baby corn, halved lengthways
  • 100g snow peas, trimmed, halved diagonally
  • 440g pkt udon noodles
  • 1 spring onion, sliced diagonally
  • 3.00 gm sesame seeds
Instructions:
  • In a large deep frying pan over medium-high heat, heat 1 tablespoon of oil until shimmering. Add the beef and cook for about 3 minutes, stirring occasionally, until evenly browned. Remove the beef and place it in a heatproof bowl.
  • In a small bowl, blend together teriyaki sauce, soy sauce, mirin, ginger, and 2 tablespoons of water.
  • In the same pan, heat the rest of the oil over medium-high heat. Sauté the brown onion, capsicum, and corn for 3 minutes or until they begin to caramelize. Toss in the snow peas and teriyaki mixture, then add the beef and noodles. Stir well and cook for 3 minutes until noodles are warmed. Serve with a garnish of spring onion and sesame seeds.
