Irresistible coffee cake with biscuit mix and buttermilk, topped with a crunchy graham cracker crumb topping.
Ingredients:
  • 2 cups baking mix (such as Bisquick ®)
  • 0.5 cup brown sugar
  • 0.75 cup chopped pecans
  • 2 tablespoons instant coffee granules
  • 1 large egg
  • 1 cup butter flavored shortening, melted
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 0.25 cup brown sugar
  • 0.25 cup chopped pecans
  • 0.25 cup graham cracker crumbs
  • 0.25 cup softened butter
Instructions:
  • Preheat your oven to a toasty 375 degrees F (190 degrees C) and generously grease and flour a 10-inch square cake pan.
  • In a large bowl, combine baking mix, 1/2 cup brown sugar, 3/4 cup chopped pecans, and instant coffee granules. In another large bowl, whisk together egg, shortening, buttermilk, and vanilla. Gently fold the dry ingredients into the wet ingredients until well combined.
  • Spread a decadent mixture of 1/4 cup brown sugar, 1/4 cup chopped pecans, and graham cracker crumbs over the batter in the pan.
  • Once the cake is perfectly baked and a toothpick comes out clean from the center, generously dot the top with softened butter. Enjoy!
