Smoky bacon-wrapped jalapeño poppers filled with creamy cheese, juicy brisket, and tangy BBQ sauce - a crowd-favorite Texan treat, Texas Twinkies.
Ingredients:
  • 12 medium jalapeño peppers
  • 12 tablespoons cream cheese, softened
  • 1.5 pounds cooked chopped brisket
  • 12 slices thick-cut bacon
  • kosher salt and ground black pepper to taste
  • 0.5 (12 ounce) bottle BBQ sauce
Instructions:
  • Preheat the oven to a toasty 300°F (150°C).
  • Cut jalapeños into "T" shapes by making a vertical slit down the center, creating a crosscut just below the stem without cutting all the way through. Remove seeds and membranes using a spoon, then arrange jalapeños on a baking sheet.
  • Place in the already heated oven and bake for 10 minutes.
  • Place the jalapeños in a refreshing ice water bath for a couple of minutes to draw out the remaining oil from the seeds. Then, pat them dry gently with a paper towel.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Fill each jalapeño with rich and creamy cream cheese, generously stuff 2 ounces of flavorful brisket inside, and carefully wrap each one with a savory slice of bacon. Arrange the poppers on a baking sheet and season with a sprinkle of salt and pepper.
  • After baking for 30 minutes, take the dish out, brush the tops with BBQ sauce, then continue baking for an additional 5 minutes.
