Impress with flavorful Thai pork dumplings perfect for entertaining.
Ingredients:
  • 9.20 gm vegetable oil
  • 3 green onions, thinly sliced
  • 1 stalk lemongrass (white part only), finely chopped
  • 500g pork mince
  • 44.00 gm sweet chilli sauce
  • 31.50 gm lime juice
  • 6.10 gm fish sauce
  • 20.00 ml finely chopped fresh coriander leaves
  • 20.00 ml finely chopped fresh mint leaves
  • 12 sheets filo pastry
  • Canola oil cooking spray
  • 1/2 bunch fresh chives, halved, blanched (see note)
Instructions:
  • In a large frying pan over medium-high heat, heat oil until shimmering. Add onion and lemongrass, cook and stir for 2 minutes until fragrant. Then add mince and cook, breaking it up with a wooden spoon for 8 to 10 minutes until browned. Stir in sweet chili sauce, lime juice, fish sauce, coriander, and mint. Remove from heat and enjoy!
  • Preheat the oven to 180°C/160°C fan-forced and line 2 large baking trays with baking paper. Layer the filo sheets, spraying each with oil, to create 4 stacks. Cut the stacks in half lengthways and then into thirds.
  • Lay a filo sheet on a flat surface, add a spoonful of mince mixture in the middle. Fold and pinch the sides to create a pouch, securing it with a chive. Place on a baking tray. Repeat with remaining ingredients. Lightly spray the pouches with oil. Bake for 25 minutes until crisp and golden. Serve with sauce.
