Craft the ultimate summer burger with a zesty tangy sauce.
Ingredients:
  • 1kg beef mince
  • 35g breadcrumbs
  • 2 red onions, 1 grated, 1 thickly sliced
  • 2 garlic cloves, finely chopped
  • 40.00 ml finely chopped flat-leaf parsley
  • 20g parmesan
  • 46.80 gm Dijon mustard
  • 1 egg
  • 6 rashers streaky bacon, halved
  • Olive oil, to brush
  • Brioche buns, split, toasted, to serve
  • Rocket, to serve
  • Basil, to serve
  • 2 vine-ripened tomatoes, thickly sliced, to serve
  • French fries (optional), to serve
  • 150g mayonnaise
  • 20.80 gm tomato ketchup
  • 1 dill pickle, chopped
  • 1 garlic clove, finely chopped
  • 0.63 gm sweet paprika
Instructions:
  • Blend all the sauce ingredients in a compact food processor. Refrigerate until ready to use.
  • Combine mince, breadcrumbs, grated onion, garlic, parsley, parmesan, mustard, and egg in a large bowl. Season generously, shape the mixture into 6 patties with clean damp hands, then refrigerate for 30 minutes.
  • Prepare your barbecue plate or frypan by greasing it and heating it to medium-high. Sear the onion rings until they develop a light char, turning them once. Next, crisp up the bacon, turning it until it reaches the desired crispy texture. Keep both ingredients warm until serving.
  • Heat up a barbecue grill or chargrill pan to medium-high. Brush the patties with oil and cook for 2-3 minutes on each side until they are nicely charred and fully cooked.
  • Begin by generously spreading the sauce over the bun bases. Next, add layers of rocket, basil, onion, tomato, bacon, and patties. Drizzle more sauce on top, then add additional rocket before sealing the burgers with the bun lids. Accompany with French fries, if desired.
