Top mini pound cake circles with creamy mocha filling for a decadent dessert.
Ingredients:
  • 12 slices (1/4 inch thick) frozen (thawed) pound cake (from 10-oz package)
  • 1/4 cup water
  • 1 1/2 teaspoons instant coffee granules
  • 1 1/2 teaspoons rum extract
  • 1 container (8 oz) mascarpone cheese
  • 1/4 cup powdered sugar
  • 1/2 cup whipping cream
  • 1/2 oz semisweet baking chocolate
  • 24 espresso coffee beans, if desired
Instructions:
  • Prepare 24 mini muffin cups by lining them with petit four paper cups. Cut out 2 (1 1/4-inch) rounds from each cake slice, then place 1 round in the bottom of each cup.
  • Combine water, coffee granules, and 1/2 teaspoon of rum extract in a small bowl. Drizzle roughly 1/2 teaspoon of the coffee mixture over each cake in the muffin cups. Set aside.
  • In a medium bowl, use an electric mixer to blend cheese, powdered sugar, and 1 teaspoon rum extract until creamy. In a separate bowl, whip the cream until soft peaks form on high speed. Gently fold the cheese mixture into the whipped cream on low speed. Spoon or pipe a dollop of the mixture onto each cake in the cups.
  • Sprinkle grated semisweet chocolate over each cup and garnish with a coffee bean. Chill for at least 4 hours to let the flavors meld. Keep refrigerated, covered.
