Toasted brioche with honeyed dried fruit

Ingredients:
  • 375mls (1 1/2 cups) water
  • 60mls (1/4 cup) honey
  • 6 cardamom pods, bruised
  • 300g dried fruit salad (Robern brand)
  • 100g fresh ricotta
  • 4 1.5cm-thick slices brioche bread
Instructions:
  • In a medium saucepan, combine water, honey, and cardamom pods.
  • Cook the mixture over medium heat until the honey melts. Mix in the dried fruit salad and raise the heat to high. Once it reaches a boil, reduce the heat to medium-low and simmer uncovered for 10 minutes until the fruit is tender.
  • Strain the fruit over a bowl, then return the syrup to the saucepan and simmer over medium-high heat for 10 minutes until it reduces by half.
  • Preheat the grill to medium. Beat the ricotta using electric beaters in a small bowl until almost smooth. Grill the brioche slices on a tray for 1-2 minutes per side until golden. Arrange the toasted brioche on serving plates, top with dried fruit, drizzle with warm syrup generously, and serve immediately with a dollop of ricotta.
