Indulge in layers of savory ham, roast pork loin, Swiss cheese, and tangy dill pickles, all toasted to golden perfection in this classic Cuban sandwich.
Ingredients:
  • Chipotle Mayonnaise:
  • 1.5 cups mayonnaise
  • 0.5 cup sour cream
  • 0.25 cup chopped fresh cilantro
  • 0.25 cup diced green onions
  • 1.5 tablespoons ground chipotle peppers
  • 1 tablespoon lime juice
  • 1 tablespoon garlic basil spread (see footnote for recipe link)
  • 1 teaspoon ground cumin
  • salt and ground black pepper to taste
  • Fillings:
  • 2 sweet onions, sliced
  • 1 teaspoon red pepper flakes
  • 1 teaspoon dried oregano
  • 2 jalapeno peppers cut into rings, divided
  • 4 ciabatta sandwich rolls, sliced horizontally
  • 0.25 cup sweet hot mustard, divided
  • 0.5 pound sliced Swiss cheese, divided
  • 0.5 pound sliced deli roast pork loin, divided
  • 0.5 pound sliced ham, divided
  • 2 dill pickles, cut into strips lengthwise - divided
Instructions:
  • In a small bowl, mix together mayonnaise, sour cream, cilantro, green onions, ground chipotle peppers, lime juice, garlic basil spread, cumin, salt, and black pepper. Stir well, cover, and refrigerate for at least 1 hour.
  • Preheat your oven to a piping hot 500 degrees F (260 degrees C).
  • In a large skillet over medium-high heat, heat olive oil. Sauté onions, red pepper flakes, and oregano in the fragrant oil until onions start to soften, approximately 5 minutes. Season with salt and black pepper. Throw in half of the jalapeno rings and cook until slightly softened, about 2 to 3 minutes. Set aside remaining jalapeno rings for later use.
  • On each ciabatta roll, generously spread 1 tablespoon of sweet hot mustard and 2 tablespoons of chipotle mayonnaise. Then, evenly distribute Swiss cheese slices, pork loin slices, ham, dill pickles, and the remaining jalapeno rings among the four sandwiches. Finish by topping each sandwich with the cooked onion mixture.
  • Arrange the sandwiches on a baking sheet and bake until the cheese is melted, the bread is toasted, and everything is warm, about 4 to 5 minutes.
