Garlic lovers rejoice! Baked garlic chicken served over herbed tomato pasta.
Ingredients:
  • 10 bulbs garlic, cloves separated and peeled
  • 8 skinless, boneless chicken breast halves
  • 1 tablespoon olive oil
  • 1 tablespoon white wine
  • 1 pinch ground black pepper
  • 1 onion, chopped
  • 1 teaspoon olive oil
  • 2 tablespoons butter
  • 2 (14.5 ounce) cans diced tomatoes
  • 1 tablespoon chopped fresh rosemary
  • 1 (8 ounce) package spinach tagliatelle pasta
Instructions:
  • Preheat oven to a toasty 180°F (81°C).
  • Peel and crush the garlic to release juices. Sear the chicken in a large skillet with 1 tablespoon of olive oil and white wine. Place all the garlic in a lightly greased 9x13 inch baking dish and top with the chicken. Sprinkle with black pepper. Bake in a preheated oven for 30-45 minutes until the juices run clear.
  • Saute the onion in a mixture of 1 teaspoon of olive oil and butter/margarine until soft and golden. Mix in the tomatoes and your preferred fresh herbs, then remove from heat.
  • Cook the pasta in a generously salted pot of boiling water for 8-10 minutes until it's al dente. Drain the pasta and arrange it on a long, shallow serving dish. Cover it with tomato sauce, layer with baked garlic chicken pieces along with some or all of the garlic. Serve and enjoy!
