Whip up a quick and delicious tuna melt bake for a crispy weeknight dinner option!
Ingredients:
  • 75g butter
  • 1 brown onion, finely chopped
  • 500g cauliflower, roughly chopped
  • 2 tsp finely chopped fresh thyme leaves
  • 62.50 ml plain flour
  • 193.13 gm milk
  • 191.25 gm salt reduced chicken style liquid stock
  • 5.90 gm dijon mustard
  • 375.00 ml grated tasty cheese
  • 425g can tuna in olive oil, drained, flaked
  • 250.00 ml frozen peas
  • 60g baby spinach
  • 180g bread
  • 20.00 ml finely chopped fresh flat-leaf parsley leaves
  • 40.00 ml finely grated parmesan
Instructions:
  • Preheat your oven to a piping hot 200°C/180°C fan-forced.
  • In a large saucepan over medium-high heat, melt 50g butter. Add onion and cook for 5 minutes until softened, stirring occasionally. Next, add garlic, cauliflower, and half of the thyme, and cook for 1 minute. Stir in flour and cook for an additional minute. Reduce the heat to medium and gradually pour in the milk and stock. Stir continuously for 5 minutes until the mixture boils and thickens.
  • Mix in the mustard and 1 cup of delicious cheese until smooth and melted. Take off the heat, then gently fold in the tuna, peas, and spinach. Transfer the mixture into a greased 5cm-deep, 22cm x 23cm baking dish.
  • Place the rest of the butter in a microwave-safe bowl and microwave on HIGH for 10 to 20 seconds until melted. In a large bowl, combine bread with the melted butter, parsley, remaining thyme, and tasty cheese. Toss everything together to coat evenly. Spoon the bread mixture over the tuna in the dish, season with salt and pepper, sprinkle with parmesan, then bake for 25 minutes until golden and bubbly. Serve and enjoy!
