Retro-style tuna melt dip topped with bubbly cheese and fresh tomatoes, perfect for dinner or a hot party appetizer.
Ingredients:
  • 1 cup mayonnaise
  • 1/4 cup thinly sliced scallions, plus more for garnish
  • 2 tablespoons chopped fresh flat-leaf parsley, plus more for garnish
  • Juice of 1 lemon
  • 1 teaspoon chopped fresh tarragon
  • 1 teaspoon Dijon mustard
  • 1/8 teaspoon freshly ground black pepper
  • 3 (6-ounce) cans solid white tuna in oil, drained
  • 1 cup chopped plum tomatoes (about 2 large plum tomatoes)
  • 1 cup (4 ounces) shredded sharp Cheddar cheese
  • Toasted rye bread slices, cut into triangles, for serving
Instructions:
  • Preheat your oven to 350°F for optimal baking results.
  • For the tuna salad: Combine mayonnaise, scallions, parsley, lemon juice, tarragon, mustard, and black pepper in a large bowl. Gently fold in drained tuna, using a fork to flake it, until everything is well mixed.
  • Create the dip by layering the tuna salad at the bottom of an 8-inch cast-iron skillet or 1 1/2-quart round baking dish. Top the tuna salad with a layer of tomatoes and sprinkle cheese over the tomatoes.
  • Bake until the cheese is melted and everything is warmed through, about 25-30 minutes. Top with chopped parsley and scallions. Serve warm with toasted rye bread. If you enjoyed this dish, please leave a star rating!
