Try this gourmet cheesy tuna sandwich for a delicious seafood meal.
Ingredients:
  • 2 cans (5 oz each) solid white tuna in water, drained
  • 1/3 cup mayonnaise or salad dressing
  • 1/4 cup finely chopped celery
  • 1 tablespoon finely chopped onion
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon red wine vinegar
  • 1/8 teaspoon salt
  • 1/8 teaspoon freshly ground pepper
  • 4 slices rye bread
  • 8 slices Swiss cheese
  • 8 slices tomato
Instructions:
  • Preheat the broiler.
  • Combine tuna, creamy mayonnaise, crunchy celery, flavorful onion, aromatic parsley, tangy vinegar, and a pinch of salt and pepper in a bowl.
  • Arrange the bread slices on a baking sheet and broil them with the top of the oven about 4 to 6 inches from the heat for 1 minute or until they are lightly toasted.
  • Flip the bread on the baking sheet. Top each slice with 1/3 cup of tuna salad on the untoasted side, 1 slice of cheese, 2 slices of tomato, and another slice of cheese. Broil the sandwiches in the oven for 3 to 5 minutes until the cheese is melted.
