Tuna pasta bake

Make a tasty tuna pasta bake by Curtis Stone for a simple weeknight dinner.
Ingredients:
  • 36.40 gm olive oil, plus more to coat baking dish
  • 250g Brand large pasta shells
  • 1 medium brown onion, cut into medium dice
  • 2 medium celery stalks, thinly sliced
  • 0.63 gm Brand ground nutmeg
  • 1/4 tsp Brand dried chilli flakes
  • 40.00 ml Brand red wine vinegar
  • 60.00 ml plain flour
  • 515.00 gm full-cream milk
  • 250.00 gm water
  • 2 x 185g cans Brand tuna chunks in springwater, water reserved
  • 75g spinach
  • 250.00 ml parmesan cheese shredded
  • 82.50 ml Smart Buy dried breadcrumbs
Instructions:
  • Preheat the oven to 180C (160C fan-forced) and lightly grease a 33cm x 22cm x 5cm baking dish. Position the rack in the center of the oven.
  • 1. Bring a generously salted pot of water to a vigorous boil. Add the pasta shells and cook, stirring occasionally to prevent clumping, for 8 minutes, or until al dente. Drain well.
  • Heat a large heavy-based saucepan over medium heat. Add oil and heat for 1 minute. Cook onion and celery for 5 minutes until softened. Stir in nutmeg and pepper flakes. Add vinegar and cook until nearly evaporated, about 30 seconds.
  • Gradually incorporate the flour into the vegetables and cook for about 1 minute, stirring constantly until coated. Pour in the milk and water while whisking continuously to prevent lumps. Season the sauce with salt and pepper to taste, and simmer over medium-high heat until it reaches a gentle simmer. Reduce heat to medium-low and simmer for 10 minutes until the sauce slightly thickens.
  • Take the pan off the heat and mix the tuna along with its juices into the sauce. Stir in the pasta, spinach, and 1/2 cup of parmesan cheese. Season with salt and pepper to taste before transferring everything to the baking dish.
  • Combine breadcrumbs and the remaining 1/2 cup of Parmesan cheese in a small bowl, then sprinkle over the pasta mixture.
  • Bake for 25 minutes until bubbly all over and a light golden color on top. Let it sit at room temperature for 5 minutes before serving.
