Budget-friendly, hearty shepherd's pie packed with flavor.
Ingredients:
  • 600g potato
  • 30g butter
  • 64.38 gm milk
  • 250.00 ml grated tasty cheese
  • 9.20 gm olive oil
  • 1 medium brown onion, chopped
  • 720g jar tomato pasta sauce
  • 2 celery stalks, trimmed, chopped
  • 150g broccoli, cut into florets
  • 82.50 ml frozen corn kernels
  • 40.00 ml chopped fresh basil leaves
  • 425g can tuna in springwater, drained, flaked
Instructions:
  • In a large saucepan, simmer the potato in cold water until tender, about 15 minutes. Drain and mash. Mix in butter, milk, and two-thirds of the cheese. Season with salt and pepper, then stir until creamy. Keep covered to stay warm.
  • Heat oil in a large saucepan over medium heat. Sauté onion for 2 to 3 minutes until softened. Add pasta sauce, celery, broccoli, and corn. Cook for 6 to 8 minutes until vegetables are tender. Stir in basil, tuna, salt, and pepper.
  • Preheat the grill to medium heat. Divide the tuna mixture evenly among four 1 1/2 cup-capacity ramekins. Top with mashed potato and sprinkle with the remaining cheese. Grill for 4 to 5 minutes until the potato turns golden and the cheese melts. Serve hot.
