Simple cinnamon rolls made with two-ingredient dough and a sweet vanilla glaze drizzled on top for extra indulgence.
Ingredients:
  • 1.5 cups self-rising flour, plus more for kneading
  • 1 cup whole-milk plain Greek yogurt
  • 2 tablespoons unsalted butter, melted, divided
  • 1 teaspoon ground cinnamon
  • 1 pinch salt
  • 2 tablespoons light brown sugar
  • 0.25 cup chopped pecans
  • 0.5 cup sifted confectioners' sugar
  • 1 tablespoon milk
  • 0.25 teaspoon vanilla extract
Instructions:
  • Mix self-rising flour and yogurt in a medium bowl until a dough ball forms.
  • Place the dough ball on a lightly floured surface and knead until smooth, adding more flour if needed to prevent sticking.
  • Using a dusting of flour, gently flour a rolling pin. Roll out the dough into a 7x12 inch rectangle, adding more flour to the pin if needed to prevent sticking.
  • Drizzle 1 tablespoon of warm, melted butter over the rolled dough.
  • In a small bowl, mix cinnamon and salt together. Sprinkle this mixture over the buttered dough. Evenly spread brown sugar over the dough, followed by the chopped pecans.
  • Roll the dough starting from one end, enclosing all the cinnamon and nuts inside, until you have a log approximately 4 inches in diameter and 7 inches in length.
  • Wrap the dough roll in parchment paper and chill in the freezer for 20 minutes.
  • Preheat your oven to 375°F (190°C) while lining or greasing a pie pan.
  • Divide the dough into 6 rolls using a bench scraper or sharp knife.
  • Arrange the rolls in a ring in the pan so they are touching each other. Brush the tops of the rolls with the remaining melted butter.
  • Bake until the tops are golden brown, for about 20-25 minutes. Allow to cool briefly after removing from the oven.
  • As the rolls bake, combine confectioners' sugar, milk, vanilla extract, and salt in a bowl, stirring until sugar is fully dissolved. Adjust consistency by adding more milk if too thick or more sugar if too thin.
  • If desired, drizzle the rolls with the optional glaze before serving them warm.
