Two-Ingredient Dough Teriyaki Chicken Flatbreads

Whip up delicious teriyaki chicken flatbreads with simple two-ingredient dough. Great for appetizers or entrees.
Ingredients:
  • cooking spray
  • 1.5 cups self-rising flour, plus more for kneading
  • 1 cup whole-milk plain Greek yogurt
  • 2 teaspoons olive oil
  • 0.5 medium red onion, thinly sliced
  • 1 tablespoon olive oil
  • 3 fluid ounces thick teriyaki sauce
  • 1 cup cooked and shredded chicken breast meat
  • 0.75 cup shredded mozzarella cheese
  • 2 teaspoons chopped fresh cilantro
Instructions:
  • Preheat the oven to 425 degrees F (220 degrees C) while giving your baking sheet a light spray of cooking spray.
  • Combine the flour and yogurt in a bowl until a crumbly dough forms. Transfer the dough to a lightly floured work surface and knead for 5 to 7 minutes until smooth, adding more flour as needed. Divide the dough in half and shape each portion into a ball.
  • Flatten each dough ball into thin 1/4 inch ovals using your hand or a rolling pin for ease. Shape into two long ovals.
  • Place the dough on the baking sheet, poke with a fork, and brush with 1 tablespoon of olive oil.
  • After baking in the preheated oven for 3 minutes, leave the oven on.
  • Heat 2 teaspoons of olive oil in a medium skillet over medium heat. Sauté onion slices for 3 minutes until translucent and fragrant.
  • Evenly coat the crusts with savory teriyaki sauce, making sure to leave a 1/2-inch border untouched. Layer on the chicken, onions, and gooey mozzarella cheese.
  • Continue baking in the oven until both the crusts and toppings reach your desired level of golden brown, usually around 9 to 11 minutes.
  • Take out of the oven and adorn with fresh cilantro, then slice and serve promptly.
