Cozy vegetarian cabbage soup brimming with robust, hearty veggies - ideal for chilly nights.
Ingredients:
  • 4 tablespoons olive oil
  • 1 large onion, diced
  • 4 cloves garlic, chopped
  • 10 cups cold water
  • 3 stalks celery, chopped
  • 1 zucchini, chopped
  • 1 green bell pepper, chopped
  • 0.5 red bell pepper, chopped
  • 1 medium head red cabbage, chopped
  • 1 medium head green cabbage, chopped
Instructions:
  • Heat olive oil in a 3-quart pot over medium heat. Sauté onion and garlic until soft, about 5 minutes. Pour in water, salt, and pepper, bring to a boil. Add celery, zucchini, and bell peppers, boil for 7 minutes. Stir in cabbages, boil until desired softness, about 30 minutes.
