Try this delicious twist on a classic grilled cheese by using a waffle iron to create a crispy and gooey sandwich with bread, cheese, mayo, and mustard.
Ingredients:
  • 2 tablespoons mayonnaise
  • 2 teaspoons Dijon mustard
  • 4 slices whole-grain bread
  • 2 ounces shredded pepperjack cheese
Instructions:
  • Preheat your waffle iron following the manufacturer's guidelines.
  • Combine mayonnaise and Dijon mustard in a bowl, then spread over one side of each bread slice. Add pepperjack cheese on top of the mayo-mustard layer on 2 of the bread slices. Finally, top each with another bread slice to make 2 sandwiches.
  • Place 1 sandwich in the waffle iron without pressing down all the way. Allow the bread to slightly soften from the heat for approximately 2 minutes. Gradually apply pressure to the top, fully closing the iron within 3 to 4 minutes. Cook until golden brown, about 2 to 3 minutes. Repeat with the other sandwich.
