Walnut & muscatel French sticks

Ingredients:
  • Vegetable oil, to grease
  • 2 tsp (7g/1 sachet) dried yeast
  • 310ml (1 1/4 cups) lukewarm milk
  • 64.80 gm malt extract
  • 8.00 gm brown sugar
  • 300g (2 cups) plain flour
  • 240g (1 1/2 cups) wholemeal plain flour
  • 1 tsp bread improver
  • 2.40 gm salt
  • 200g (2 cups) walnut halves
  • 100g muscatels
  • 1 egg, lightly whisked
  • 28.60 gm honey
Instructions:
  • Grease a baking tray by brushing it with oil. In a bowl, mix yeast, milk, malt, and sugar together. Let the mixture sit in a warm, draft-free spot for 10 minutes or until it becomes foamy.
  • In a large bowl, mix the flours, bread improver, and salt. Create a well in the center and pour in the yeast mixture and olive oil. Stir with a wooden spoon until combined, then use your hands to form the dough in the bowl.
  • Transfer the dough onto a lightly floured surface and knead for 10-15 minutes until it becomes smooth and elastic. Grease a large bowl with oil. Place the dough in the bowl and coat it with oil. Cover the bowl with plastic wrap and allow it to rise in a warm, draft-free spot for 1 hour until doubled in size.
  • 1. Preheat the oven to 200C. 2. With enthusiasm, press down the centre of the dough using your fist. 3. Transfer the dough onto a lightly floured surface. Incorporate the walnuts and muscatels and knead for 5 minutes until the dough is stretchy and has regained its initial size. 4. Divide the dough into 2 sections. Shape each into 30cm-long logs and position them on the prepared tray. 5. Leave the logs in a cozy, draft-free spot for 30 minutes or until they have doubled in size.
  • Mix the egg and honey together in a bowl. Brush the loaves with the egg mixture. Bake in the oven at 200°C for 15 minutes, then reduce the temperature to 180°C and bake for another 20 minutes, or until the loaves sound hollow when tapped on the base. Slice and serve.
