Warm red cabbage coleslaw

Ingredients:
  • 36.40 gm olive oil
  • 1 red onion, halved, sliced crossways
  • 125.00 ml flame raisins (see note)
  • 1/2 red cabbage, shredded
  • 20.00 gm caster sugar
  • 40.00 ml red wine vinegar
Instructions:
  • In a large, heavy-based saucepan over medium-high heat, heat oil. Add onion and cook for 2 minutes until tender, stirring occasionally. Mix in raisins until coated.
  • Combine the cabbage and sugar in the pan, then lower the heat to medium. Allow to cook for 4 minutes or until the cabbage starts to wilt. Mix in the red wine vinegar, and take the pan off the heat. Season with salt and pepper, and serve the dish warm.
