Delicious white chocolate chip cupcakes, ideal for parties with a customizable frosting.
Ingredients:
  • 0.5 cup white sugar
  • 2 large eggs, room temperature
  • 0.25 cup whole milk
  • 1 cup white chocolate chips
  • 1 cup all-purpose flour, sifted
  • 0.5 cup unsalted butter, melted
Instructions:
  • Preheat the oven to 350°F (175°C) and line 10 muffin tin cups with paper liners.
  • In a stand mixer bowl, combine sugar and eggs. Beat with paddle attachment until fluffy and pale yellow.
  • In a saucepan, gently heat the milk until it almost boils. Add white chocolate chips and whisk until smooth. Pour this mixture over the sugar, beat for 1 minute, then mix in the vanilla. Gently fold in the flour and baking powder, being mindful not to overmix. Lastly, fold in the melted butter.
  • Spoon batter into each muffin cup, filling them 2/3 of the way.
  • Bake the cupcakes in the preheated oven for 20 to 25 minutes until they rise and are firm to the touch. Then, transfer them to a wire rack to cool.
