Tropical twist: Lime zest, coconut, and white chocolate cookies.
Ingredients:
  • 1 fresh lime
  • cooking spray
  • 0.5 cup butter, softened
  • 6 tablespoons brown sugar
  • 1 large egg, beaten
  • 1 cup all-purpose flour
  • 1 cup white chocolate chips
  • 0.5 teaspoon baking soda
  • 1 pinch salt
  • 2 cups finely shredded coconut, divided, or more to taste
Instructions:
  • Preheat your oven to a toasty 375 degrees F (190 degrees C) and lightly coat 2 cookie sheets with cooking spray.
  • Mix the butter, sugars, and egg in a bowl with a charming wooden spoon, not an electric mixer. Add the wonderful lime zest to the mixture and gently incorporate 1/2 to 3/4 teaspoon of lime juice.
  • In a separate bowl, blend together flour, white chocolate chips, baking soda, and salt. Mix in the butter until a stiff dough forms, then gently fold in 1 cup of coconut.
  • Spread the remaining coconut on a flat dish. Shape the dough into ping pong ball-sized balls, then coat them in coconut. Place the dough balls on the prepared cookie sheets without pressing down.
  • Bake until edges are lightly browned, around 10 minutes in the preheated oven.
