Indulge guests with pumpkin-oat white chocolate macadamia cookies - a delectable dessert.
Ingredients:
  • 2 cups Gold Medal™ all-purpose flour
  • 1 teaspoon baking soda
  • 3/4 cup butter, softened
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 1/2 cup canned pumpkin (not pumpkin pie mix)
  • 1 cup quick-cooking or old-fashioned oats
  • 1 cup chopped macadamia nuts, toasted
  • 1 bag (12 oz) white vanilla baking chips (2 cups)
Instructions:
  • Preheat oven to 375°F and prepare cookie sheets with parchment paper.
  • In a medium bowl, combine flour, baking soda, and salt; set aside. In a large bowl, cream together butter, granulated sugar, and brown sugar until smooth using an electric mixer. Mix in pumpkin and egg until well combined. Gradually add the flour mixture and mix. Fold in oats, nuts, and 1 cup of white chips. Drop rounded tablespoonfuls of dough onto cookie sheets about 2 inches apart. Bake for 12 minutes or until lightly browned. Then transfer the cookies from the sheets to cooling racks to cool completely.
  • Microwave 1 cup white chips in a small microwavable bowl on High for 1 minute, stirring once, until smooth. Drizzle over cookies and let it set on waxed paper.
