Elegant asparagus wrapped in prosciutto with lemon, garlic, and creamy goat cheese - a versatile and tasty dish perfect for any occasion.
Ingredients:
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 16 medium fresh asparagus spears, each trimmed to 5 inches
  • 8 thin slices Margherita® Deli Prosciutto
  • 0.33333334326744 cup soft goat cheese
Instructions:
  • Preheat the oven to 425 degrees F. In a large bowl, mix together lemon juice, olive oil, and garlic. Add the asparagus and toss until coated. Transfer the asparagus to a baking pan.
  • Bake for 8 minutes until crisp-tender, then allow to cool at room temperature for approximately 15 minutes.
  • Cut the prosciutto slices in half lengthwise. Spread each piece with approximately 1 teaspoon of creamy goat cheese. Roll each slice around an asparagus spear in a charming spiral. Enjoy right away or chill until serving time.
